Soups – a nutritious and easy weeknight dinner and perfect comfort food after a difficult workout, to help relax those aching, frozen bones!!!
What’s better than a hot soup after a cold and tiring workout!!
Here’s how it’s done in just 3 steps:
Step 1 – get your biggest pot and add in peas, corn, white beans and diced – carrots, string beans, potatoes, celery, onion and tomatoes. Season with salt, pepper, paprika and lastly toss in a generous amount of greek olive oil and two cups water.
Step 2 – leave to boil on low heat till the carrots and beans are soft.
Step 3 (optional) – The last half hour of cooking, remove 1/2 cup of ingredients (w/o liquid) and mash well, using a fork. Return to the oven, stir, and continue cooking for another 30 minutes. This helps to thicken the soup.
Whats better than cuddling up in front of a fire with a soup-er cup of hot wholesome home-cooked soups made with clean, and easy to find ingredients. Keeping in mind that beans and veggies are the ultimate energizing duo, full of protein and nutrients.
This warm soup has helped nurse us through the coldest winter nights, so many a times!!!
