Soups – a nutritious and easy weeknight dinner and perfect comfort food after a difficult workout, to help relax those aching, frozen bones!!!

What’s better than a hot soup after a cold and tiring workout!!

Here’s how it’s done in just 3 steps:

Step 1 – get your biggest pot and add in peas, corn, white beans and diced – carrots, string beans, potatoes, celery, onion and tomatoes.  Season with salt, pepper, paprika and lastly toss in a generous amount of greek olive oil and two cups water.

Step 2 – leave to boil on low heat till the carrots and beans are soft.

Step 3 (optional) – The last half hour of cooking, remove 1/2 cup of ingredients (w/o liquid) and mash well, using a fork. Return to the oven, stir, and continue cooking for another 30 minutes. This helps to thicken the soup.
